Congratulation to Elsie!


Today is Elsie's engagement day. Congratulation!

This is another challenge for my fondant cake. I'm happy and
great honour she give me this opportunity. Me and Elsie both
are busy with our work recently, she told me she got no time
to prepare for her engagement stuff only this; she have to take
off 3 days before her engagement day.

She is the one seek perfect in every way. I was pressure when
she asked for this. She also keep to remind me this cake must
comes with some blue color decoration because her fancy like
blue color.

Together with these cupcakes for Elsie & Jason. These are vanilla
cupcakes with cocoa butter cream.

Again, congratulation for Elsie & Jason!

Yam Cake for Sakura


This is a sponge cake sandwich with yam and coconut milk filling;
frosted with yam cream. Top with a Melody image drawing.

I ask CG who is Melody when she called me for this, I only knew
those Disney character or some from cartoon network. Haha, I
really outdated. CG told me Melody and Hello Kitty are best
friend then she sent me this image.

I told CG, her sister's name, Sakura is a sweet and beautiful
name. CG said because her sister's Chinese name got a word of
"樱".

Another Parent's Day

I've made these chocolate brownies for another parent's day
celebration dinner.

I was informed by them these brownies will given to everyone
especially for the parents who have attend to this function. They
were requested me to pack the brownies into a nice small gift boxes.

Since this is a charity work and have to save the cost, I've decided
and sponsor these gold and silver small boxes for their celebration.

When I'm packing this, I've think of my dad, did he blame to me
or unhappy because I not celebrate this father's day with him?
Anyway, I hope all the parents who were attended to this dinner
will have a happy and lovely night.

Konbu and Chicken Feet Soup

Konbu (海带) is a type of seaweed found in cold waters. A large
seaweed plants belonging and classified to the brown algae and
in the order of laminaria.


I was understood that konbu contains iodine. Over consumption
of iodine, can cause hypertrophy of thyroid gland, this can slow
body growth and development. I was started to taken this in 7
years ago when I got the disease of thyroid gland.

Konbu is used extensively in Japanese cuisines, but also important
in Chinese and Korean cuisine. It may be pickled with sweet and
sour flavoring as a snack.

Share this to all, who are interested:

1 sheet dry konbu/ seaweed
10 pairs chicken feet
5 slices fresh ginger

2.5 litter water
some salt to taste

1. Soaked the dry konbu in water for an hour. Clean with a brush
and rise with water.
2. Cut the cleaned konbu into thin slices and drained.
3. Boil the 2.5 litter water with ginger slicer about 10 minuets.
4. Add in the remaining ingredients and boil over low heat for 2
hours.
5. Add salt to taste.

Cake for Parent's Day


I get this order from my auntie Candy for her society, Parent's
Day Celebration Dinner.

This is a 2 tier chocolate sponge cake covered with butter cream.
The cake side with 2 strawberry gold fishes.

I've found that the cream was frosted on the cake is not smoother
and nicer. I also never done this type of occasion cake before,
maybe this was made me so nervous and pressure.

Orange Chiffon Cake


I've not been baking chiffon cake for a long time. I get two orders
from CG last Friday for her company gathering.

I've left some oranges in the fridge and decided to baked one for
myself.

This chiffon comes out with a nice orange taste and soft; and I
can finished half of it.

父亲的轻微中风

父亲之前有了一次的轻微中风. 当时他和弟弟在工作,就突然觉得
全身无力,一侧身体动弹不得.

我所知道中风是因为血管受阻而导致脑部缺氧和脑部血管破裂使
到脑细胞坏死;再出现的症状为半身不遂, 口眼歪曲, 手脚麻木等.
若不及时进行治疗, 后果则不堪设想.

从父亲的病例中,我们得到了一位中医师的教导和提示, 凡是有中
风现象的患者, 千万别移动其身体,一定要让他平躺着再深呼吸放
松.然后把患者的十根手指用经已消毒的针刺一个小孔后将血毒
排出使血液畅通.如果患者的脑细胞没有坏死, 血管畅通后脑细
胞得到营养的供给就可慢慢恢复其原因的功能.

我父亲就是一个列子.他在中风后经我们用以上的方式抢救四个
小时后, 可以起身活动了.当然这是我本身所经历过和所看到的
情形, 真正的急救方法还不了解.

Pineapple Chicken


Almost three weeks I didn't got enough time to prepared a good
dinner for myself.

This pineapple chicken is an appetite meal, because it comes
with some sweet and sour taste.

Recipe:
1/2 chicken, cut into pieces
3-4 slice peeled pineapple, cut into pieces
5 tbsp tomato sauce
1 tbsp chili sauce
1 tbsp oyster sauce
2 tbsp chopped garlic
some salt, sugar to taste

seasoning:
1 tbsp corn flour
1 1/2 tbsp soy sauce

thickening:
1 tbsp corn flour
1 tbsp water

1. Marinate the chicken with seasoning for 15 minuets.
2. Heat up 2 tbsp oil, add in chopped garlic and fried until fragrant.
3. Add in the marinated chicken.
4. Add in tomato, chili and oyster sauce; also salt and sugar; continue
stir fry until chicken meat is tender.
5. Add in pineapple pieces, stir fry until well mix.
6. Thicken with corn flour mixture.

The Seven Sleeping Dwarfs

My niece keep to called me up for this after she saw my first
fondant cake. She was mentioned to me the cake must comes
with a cartoon character and asked me to decided for her.

I get this idea from a baking blog half year ago, but dare not to try
out because this is difficult for me during that time.

Since I've started my first fondant cake, and given this chance
and challenge to me by my niece. Finally, I've started for this -
my first cartoon character fondant cake.

I've spent almost four hour to finish these seven sleeping dwarfs.
They got little fingers and foots, slippers, heads, noses, covers,
pillows and blanket.

I really enjoyed for rolled fondant and this like to playing plasticine.

A Fruit Cake for my father

I had made this fruit cake for my father. This is my regards for
him as a present for his father's day this year.

My father is an "old-fashioned" man. He don't like to take any
others cake except this type of fruit cake. He always talk to me
how was he kept and stored the fruit cake in the fridge and finished
it.

I was baked this fruit cake in heart shape, and top decorated
with some fondant icing flowers.

Playing with fondant icing

This is my first attempt on fondant icing cake. My friend was
requested me to baked a cake for her but with fondant icing
decoration.

I always wanted to try out for this, but my mind always
reminded me that it's not easily to handling.

After get some advise from my baking friend and study some
fondant icing decorating techniques from my decoration books,
I've started my first fondant icing cake finally.

Cupcakes


I found this cupcake recipe from Betty Saw's many more kitchen
secret recipe book. And since I was take my rest than decided to
try it out.

This is a simple cupcake, I've ignored the vanilla essence in this
and sprinkle with some chocolate chips on top. This small cupcake
comes out nice and soft.

This recipe to share......

175gm cold butter, diced
165gm sugar (I've reduced to 150gm)
2 nos large eggs
1 tsp vanilla essence

225gm self-raising flour
20gm milk powder
1/2 tsp baking powder
1/4 tsp baking soda

3 tbsp fresh milk, cold

1.Cream butter and sugar until light.
2.Add in essence, cream well.
3.Add in eggs, one at a time.
4.Fold in sifted flour ingredients alternately with milk.
5.Spoon the mixture into cupcake cases or greased patty tin with
3/4 full.
6.Bake in a preheat oven at 175'C for 20 minuets.

My First Scone

This is the first time I made scone.

What I was understand in scones: this small cake is a quick bread.
A British snack of Scotland, made of wheat flour or oatmeal;
usually with baking powder, sugar, butter, milk or cream and
sometimes eggs. Scones are often lightly sweet but may also
savoury.

I was made this scones with "rubbing" the butter into the dry
ingredients become bread crumbs before adding the wet
ingredients to form the soft and sticky dough. Then shaped and
cut out with cutter, place on a greased baking tray and baked in a
preheat oven.

I've not prepared for my dinner last night because I was enjoyed
with this scone!

Kuih Makmur


Another try in this cookies again. I've changed the colouring into
pandan juice this time and get the nicely taste.

Even I've spent more time in wrapping filling for this cookies,
but I really enjoyed for it.

Filling:

150gm peanuts (roasted, peeled & chopped)
60gm sugar
2 tbsp peanut oil

* Mix well the ingredients & set aside.

Pastry:

125gm butter
50gm ghee
25gm sugar
1 no small egg
few drops green food colouring
225gm plain flour
1/8tsp salt
pinch of salt
some icing sugar for dusting

Method:

1. Cream butter, ghee and sugar till well.
2. Add egg and colouring, mix well.
3. Add in flour, baking powder and salt. Knead to firm a pastry
dough. Set aside for 20 minuets.
4. Divide dough into small balls about 8gm each.
5. Press thinly and wrap filling.
6. Fold into half and press into leaf-like design. Place on a greased
baking tray.
7. Bake in a preheat oven at 150'C for about 20 minuets.
8. Remove and dust with icing sugar immediately. Leave to cool.

Chicken Meat Floss Cup Cake

These cup cakes made just for my sheer greedy. My mind
suddenly comes out with this desire - some snack with sweet
and savory taste.

Here the recipe goes:-

5 nos cold eggs
10gm cake stabilizer (optional)
60ml fresh milk
250gm high protein flour
1/4tsp salt
1tbsp glycerine oil (optional)
125gm sugar (I've reduced to 100gm)
90gm melted butter

Filling & topping:

250gm mayonnaise
2tbsp olive oil
250gm chicken floss

Method:

1. Combine all ingredients except melted butter and beat till light
and fluffy.
2. Add in melted butter and mix well.
3. Greased muffin tray or prepared some muffin cases.
4. Mix mayonnaise together with olive oil.
5. Spoon one spoonful of mixture into prepared tray.
6. Add in one spoonful of chicken floss and a bit of mayonnaise.
7. Top up with another spoonful of mixture.
8. Bake at 180'C for about 30 minuets or till golden brown.
9. Stand the cup cakes for 10 minuets in the muffin mould and
turn them over.
10.Apply some mayonnaise on top and dip with chicken floss.



I've omitted the cake stabilizer and glycerine oil in this time, and
maybe this made the cake comes out a bit dried.

I like this meat floss cup cake, the taste very nice if serve with
some mayonnaise.

Baked Cheesecake

Chocolate Cotton Cheesecake

I was baked this chocolate cotton cheesecake for Randy's 13th
birthday on 26th May. This cake came late to him because I
was visited him on 30th May. He and his sister were stayed
with their grand parent at Labuan.


Just pipped simple balloons and decoration on the cake surface
for this cake.

I was happy because Randy can finished half of this cake in a
day. He told me that he like this cake!

Hello Kitty Vanilla Cheesecake

Charles had requested me to made this vanilla cheesecake for his
daughter, Bella's 6th birthday. Bella's mum told me she love hello
kitty very much! Asked me to draw a hello kitty face on the cake.


I was not feeling well these few days and I loose my voice. My
illness had left me weak when I was drawing this kitty cake; and
also because I just get back from my Labuan trip, I have to
finished this in my hurry time.
