Poker Cake (扑克脸蛋糕)

Made this chocolate cake for FQQ with a special deco from his
colleagues - a poker face drawing and with "sleeping king"

Today is the last working day of FQQ. He will be continue
his study on next month at ATI .

选用扑克牌图案做装饰是一班同事经商议后决定给 FQQ 的一
个惊喜. 开始烘焙以来,我没试过在蛋糕上画出此等图案.坦白说,
图案画得并不完美, 而且近看也可以看到画工的不精致. 奶油挤
完后, 我的眼睛也累得抬不起眼皮了.

Last Minuet Cake (柠檬起司蛋糕)

这是一个很不完美的起司蛋糕. 我是在很匆忙和紧迫的情形下完

CW 在前晚的深夜打了一通电话给我要订购草莓蛋糕,我告诉她
向我预定.最后的结果是我向她推荐了这个 Lemon Cotton Cheese

I've baked this cotton cheese cake in a hurry time because CW
was called me in last minuet time.

The surface of this cake was not as nice as previous I've baked,
because got some cracked on it. Last, I was delivered this cake to
CW with some simple and simple decoration to cover "defect"
and hope she don't care for this.

Coffee Muffin (咖啡松糕)


制作松糕并不是我的强项.虽然其制作步骤简单容易, 但是要做到
松糕会开口笑并不是容易的, 我想.

曾经有一个烘焙同好告诉我, 她也一直认为制作松糕很容易, 只
要干材料和湿材料搅一搅, 拌一拌, 再把混合料滔进烘盘和纸杯进
炉烘熟就可以了.怎知她烘出来的松糕也和我有相同的问题 - 又干
又硬. 还好,这一次的松糕烘出来的成果自己都有一点点的满意,


320gm self-rising flour
3/4 tsp baking powder
160gm sugar

2 eggs
200ml fresh milk
100gm melted butter
2tbsp instant coffee powder, dissolved with 1tbsp hot water

1. Sift self-rising flour together with baking powder into a mixing bowl.
2. Add in sugar, mix well.
3. Make a whole in the centre.
4. Mix all ingredients (B) together and slowly pour into the above.
5. Light mix with hand whisk or spatula. Do not over mix.
6. Spoon the mixture into muffin cases or muffin tray.
7. Bake at preheat oven at 180'C for 20 minuets.

Yield: 20 mini muffins.

Green Tea Cake (绿茶台式蛋糕)

My auntie called me and asking a piece of cake to her yesterday.
She was reminded to me this cake must came with not so sweet,
healthy and not oily. I've understood that my auntie always
keep to say she want to reduce her weight, but she always "eat
first than diet later......"

This is a Taiwanese sponge cake. It's soft, light, spongy and with a
strong green tea flavour. Some of my friend they don't like the
green tea taste but I've strongly recommended to one of my
baking friend of this spongy cake.


每逢周末都会褒一锅汤似乎变成了一个习惯. 由小到大家里每星期

最近老天时常下雨, 我也减少了跑菜市的次数.家里的冰箱也没有
什么较新鲜的疏果.老黄瓜是我哥之前买的, 我则另外买了排骨煮

1 条 老黄瓜
1 只 吊片
1 公斤 排骨

2.5 L 清水

1. 老黄瓜将其皮洗擦干净, 去种子切大块
2. 排骨用热水川烫后洗净
3. 将所以材料放入汤锅以大火煮滚后再转小火褒2 1/2 小时.
4. 下盐做调味

Cupcakes for Charity Bazaar

I've made these chocolate and vanilla cupcakes last night.

All these cupcakes have to delivery to my mum for her charity
bazaar at the school for deaf-mutes.

I've found those cupcakes looks simple and monotonous after
baked. Finally, I was decorated those cupcakes with some
colorful butter icing maybe this can be attract for someone who
like cupcake.

Mixed Fruits Bread (杂果甜面包)


日前,依照面包机附送的食谱尝试制作了两次面包, 可惜出来的



300gm bread flour
1 tbsp custard powder
6gm instant yeast
1/4 tsp salt
130gm cold water
1 egg
60gm sugar

35gm soft butter
120gm mixed fruits

1. Mix all dough ingredients (A) together in a mixing bowl until
a soft dough is formed.
2. Add in ingredients (B) continue to beat for another 15 minuets
3. Cover with cling wrap and leave to prove for 45 minuets
4. Roll the dough into rectangular size and put in a greased loaf pan
Cover with cling wrap and leave to prove for another 30 minuets
6. Bush with beaten egg and bake in preheat oven at 180'C for 12
minuets or golden brown

Fried Pork Slices with Korean Chili Paste

我是一个很喜欢吃辣的人. 有时吃得过了火, 我的喉咙就会出现抗



500gm belly pork (without skin intact), sliced
3 leek, cut into 5cm lengths
6 garlic
2 or more Korean chili paste
some salt to taste

1. Heat 2 tablespoon oil in a wok to stir-fry the sliced belly pork
till fragrant turn to brown color.
2. Add in peeled garlic, stir-fry for other 2-3 minuets.
3. Add in chili paste and leek, stir-fry until pork sliced is tender.
4. Add in salt to taste.

Funny Cake again....

When I've finish decorated this cake at 2.30 am this morning,
I was wondering what is this cake looks like? In my mind, it
looks like a boob cake rather than a buttock cake. Actually
CM was requested a 'big' buttock cake with g-string underwear
look for her younger brother, Ivan's birthday, this is special
order from her mum also. I felt curiously that what's a funny

Further, my icing skill was not handle with care and good in
this time. I keep to remind myself that have to make more
practice, practice and practice.....

Black Pepper Sauce Fish

My kitchen renovation work has almost completed. This is my
first dish after I was stopped my cooking for almost 2 weeks.
I always like to take fish for my meal with fry, stew or stem

This fish fillet I bought from Lido market. The green capsicum
already "stay" in my fridge for almost 2 weeks and got no idea
how to finish it.

This black pepper fish comes to my mind when I've found a bottle
of black pepper sauce in my fridge.

Recipe to share:

500-600gm fish fillet
2 nos green capsicums, cut into cubes
2 tbsp chopped garlic

1/4 tsp salt
1 tbsp ginger juice

1 no egg white
3 tbsp corn flour

Sauce (combine):
2 tbsp Lee Kum Kee black pepper sauce
1 tbsp corn flour
1 tbsp oyster sauce
1/2 tsp sugar
3 tbsp water

1. Marinate cleaned fish fillet with seasoning (A) for 1/2 hour.
2. Add in seasoning (B), mix till combined.
3. Deep fry fish fillet in hot oil until crispy and golden brown.
4. Fry chopped garlic with heated oil until fragrant.
5. Add in green capsicums. Stir in sauce ingredients and mix well.
Bring to a boil.
6. Add in fried fish fillet and mix well. Serve hot.

My "Dark" Bun

I'm not good in bread making. It's just a fun for me when I in
extreme depression and dull.

I've made these sambal ikan bilis buns because of I've found a
pack of bread flour in my fridge; And also the remaining of sambal
which was cooked by my brother.

I've take more time to let the dough proofing this time because
of the cloudy weather. The bun surface is not looks nice also
because I've over baked it.

Sweetie Dress

This is a strawberry cake requested by Cherry. I've found that
this naughty girl always give me a trouble on her cake order with
some special request and idea.

I was baked this sponge cake in a square size and cut it out
become a dress shape. Sandwich and cover the cake layer with
whipped cream and fresh strawberries.

A Slender Body Cake

This is an order from CM. She is arrange a special birthday
celebration for her friend, Michael today.

I get this idea someway from internet. Honestly, I got no special
decoration idea for adult cake; I always decoration some of the
cake with fresh fruits, piping decorations. But, for children cakes,
I can draw with some cartoon character as requested.

When CM call me for this, my mind keep to conceive how to cut
and decorate for this cake. Anyway, this is a good try for me.

This is a butter cake base, covered the cake sides and "lace"
with royal icing.

Tuna French Loaf

This is my 2nd attempts on this tuna french loaf. My kitchen have
some minor renovation recently and I also lazy to cook because
of the dust and some rubbish haven't clean out yet. This tuna
loaf has become to one of my meal. I not really like to eat tuna
actually but sometimes also can use it in my cooking.

I've made this before but the taste not cheesy as well; also the
loaf was moister because of the tuna not drained it well. I've add
in more mozzarella cheese instead of cheddar cheese this time.

1 loaf french loaf

2 tins tuna flakes, drained
100gm mozzarella cheese, grated
1 tbsp condensed milk
1 tsp pizza mix
1 tsp lemon juice
50gm UHT whipping cream
50gm plain yoghurt
some salt and pepper to taste

1. Preheat oven to 190'C.
2. Cut the loaf into half. Dig out the bread from the inner part of
the loaf.
3. Mix all others ingredients in a bowl.
4. Add in the bread from loaf.
5. Stuff filling back into the loaf.
6. Wrapped the loaf with aluminum foil.
7. Bake in preheat oven for 15 min.
8. Cut and serve with salt and pepper immediately.

Chocolate Prune Cake

I've been looking for a great prune cake recipe for a long long time.
I still remember my friend have brought me a prune cake when
her untie came to KK from Sandakan in 5 years ago. It's was a
steamed prune cake, the taste really nice, moist and soft. Then
I keep to remind her always help me to order this prune cake from
her untie when she come to KK every time.

In the meantime, I've tried to searching for several type of prune
cake. Unfortunately, the taste comes out is not like the type and
taste with my friend brought me before.

I've found this chocolate prune cake recipe from a cake book. This
is a baked prune cake, rich with chocolate flavour and moist.

260gm Unsalted butter
400gm Sugar (I've reduced to 360gm)
Pinch of salt
20gm Chocolate emulco

4 nos Eggs

50gm Cocoa powder
100gm Hot water

Juice of 1/2 lemon
330gm Milk

425gm Cake flour
1/2 tsp Baking soda
1 tsp Baking powder

250gm Prunes, chopped

1. Preheat oven to 170'C. Greased and lined a 10" round/ 9"
square cake tin.
2. Mix (D) together and let it stand for 30 minuets.
3. Beat (A) until light and fluffy.
4. Add in (B), one at a time. Combine well in each addition.
5. Mix (C) together, add into the above batter.
6. Slowly fold in sifted (E) and (D) alternatively followed by (F)
thoroughly combines.
7. Pour batter into prepared cake tin. Bake for 55 minuets - 1 hour.

* Recipe can be half.

I'm back to work!

I back to my work after take a long sick leave last week. I got
fever + headache + cough + sore throat + cold and was advised
by my doctor must take rest at home, can't go to any where,
must kept to check my body temperature every hour.

Since the H1N1 cases getting more and more, I also got some
syndromes with this illness so I better stay at home.

This long rest make me more suffer and feel everyday like a
year long. I've been accustomed with my work, kitchen stuff,
baking....Even I got more free time at home these few days
but I can't do anything because I feel weak after taking my
