Pearl Bean Carrot Soup (珍珠豆萝卜汤)


600 gm 排骨, Spare ribs
200 gm 珍珠豆, Pearl bean
15 红枣, Red date
2 红萝卜, Carrot
2500 ml 清水, Water

适量盐做调味

1. 将排骨用沸水川烫过,捞起再以清水洗净,滴干。
2. 红萝卜去皮后切角。
3. 将所有材料放入深锅里,以大火煮滚后再转小火煮约2 小时。
4. 加入适量盐调味即可。

  2. 原来需要把排骨用热水给烫过,然后再用清水清洗?其实是有什么特别原因吗?

    其实排骨在用热水川烫时, 热水表面和排骨外层会有一种浅灰色的泡沫和胶质出现,我也不懂这叫什么.排骨经川烫后在用清水洗干净,熬出来的汤水会比较清和干净.这是从我母亲身上学来的.
