Dumpling Festival (端午节)

Today is dumpling festival!

I was received a call from my dad in last morning at 7am, he
told me he had deliver some dumplings to me. Those dumplings
were made by my mum. I was greatly touched at that time!


In past few years, I was made some dumplings also to enjoy the
festive air. But I had told my mum that I'll not prepare for this
because I really busy with my office work this time.

My mum had made 2 types of dumplings, one is savoury dumpling
another is an alkaline dumpling with red bean paste. I like the
alkaline dumpling because it wrapped with pandan leave and looks
mini size. After cooked, the taste and smell very nice!

Barney Cheesecake

Made this orange cotton cheesecake to Valiant, who will celebrate
his 3rd birthday today. His mum was told me that he love all the
things with barney looks, but he dislike something he never seen
and eat before.


I was suggested this cotton cheesecake to his mum when she made
an order, because their family member don't like to take heavy
cheese cake.

Salted Vegetables Bean Curd Soup

The weather was hot on last Saturday!

I felt very difficult to breathing during my market shopping
in Lido Square. Was about 2 weeks time I didn't cooked soup,
I was decided to cook this soup because it was a light dish for
me.

Just put the enough china salted vegetables, bean curd, pork
borne and water cook about 2 1/2 hour.

Ben 10 Omnitrix Cake

Made this chocolate cake for a 3 years old boy-Ezra's birthday.
His father was told me about a month ago for this cake but till last
Friday can confirmed to me for this design.

This is a chocolate sponge sandwich and frosted with chocolate
ganache.

Hope Ezra will like this cake.

Funny Cake!!

This is a funny cake!

Catherine was called and asked me to take this order from
her colleague. This cake was requested by her colleague's bf 25th
birthday. She was mentioned to me that the cake must can see
the nipple which she will put an ear-ring on it.

My brother's house mate also wondering how can I make it to
looks like a boob cake? He never saw this before and want me to
help him take a photo!

This is a vanilla sponge cake frosted with vanilla butter cream.

My colleagues also have a big laugh when they were saw this
photo.

Steam Chicken

I like to cook this dish when I don't have any cooking idea in my
mind or I was lazy to prepare others stuff. This is a one-pot
meal. Mix all the ingredients together and steamed till cooked.

Here is the simple recipe to share:

half chicken, chopped into bite-sized,
1tbsp ginger juice,
1 small bowl of dried lily buds, trimmed & soaked with hot water,
1/2 soup bowl of black fungus, soaked & sliced,
4-5 dried chinese mushrooms, soaked & shredded,

Seasoning:
1tsp sesame oil
2tbsp oyster sauce
1tsp light soy sauce
2tbsp rice wine
1 tbsp sugar
1/4 tsp pepper
2tbsp corn flour

Marinate chicken and others ingredients with seasoning into a
heatproof dish for about 1/2 hour. Steam over high heat for
about 20-25 minuets or until cook.

Honeycomb Cake

I baked this honeycomb cake again for my brother's house mate

as requested. I was made this cake in double volume to get
three loaf. I've used golden churn butter and noticed that this
cake cames out very oily and rich in taste. The result was better
than this I was made before.

I was wondering how was my brother's friend can finished
one loaf in two days only. Who knows? Because he is a fat guy......

Mango Cheesecake

I got a call a week before from David & Rachel were asked a
mango cheesecake for their best friend, Brother Pang's birthday.
This is a 1.5kg mango cheesecake, made with fresh blended
mango puree and extra mango cubes inside the cheese filling.
They also requested that filled the top of cake with additional
mango cubes and with the word writing "Happy Birthday
Brother Pang".

I was not satisfied with the word writing because of not clear
enough and nicely done.

Durian Cream Cake

Another cake done as requested by my brother's house mate
for his friend.
This is a sponge cake filled with two layers of durian cream and
with simple decoration.

Stir Fried Scallion with Pork Slice

I was busy with my work and baking these two weeks and I got
not enough time to prepared for my dinner. Luckily I always took
one or two meals only for dinner, I not have to get hurry to
prepare for my dinner after work.

After have fed up with fish or vege only in last two weeks, I was
thinking of to cook some special for my weekend dinner.

I was decided to cook this meal as I have found some scallion in
my fridge. I soaked the belly pork in cool water after cooked then
sliced it. With the simple steps, heat-up enough oil and fried some
dry chillies and garlic until fragrant, add in the pork slices and
about 1 tbsp of spicy bean sauce to enhance the spicy taste. Lastly,
add in the scallion and stir fried till well combined.

Blue Angel

This doll cake was requested by Catherine for her sister's birthday.
Her sister also my school mate.

I was wondered when Catherine called me up for this cake, as she
told me that her sister still retain childlike innocence.

Carrot Cupcakes

These 80 carrot cupcakes were baked for Alison's daughter full
moon celebration!
She was worried to me that whether I can take this order or not
because she need to get these in the next afternoon when she
was called me up. I told her that luckily I got two oven at home,
finished and decorated those cupcakes in almost five hours at
this Wednesday night.

I was really surrendered to grate the carrots this time, I asked my
bf help me to grate the carrot finally.

I frosted these cupcakes with cream cheese frosting and piped
some little carrots on top, then sprinkled with some walnuts
and silver cachous.

Happy Mother's Day!!

Baked some cakes for mother's day......

I had celebrated my mother's day earlier with my mum on
last Saturday, hope she don't feel lonely on this day.

This is a strawberry chocolate cake special requested by my
brother's house mate for his chocolate lover mummy. I had
piped the cake side with some little strawberries.

Daisy had ordered a mix fresh fruits cake for her lovely
mummy on this mother's day! I understand that her mother
don't like to eat all sweet things especially for cake. I had
reduced the sweet taste for this cake.

These are the mango & strawberry chocolate cake baked for
Vivianne. She told me that she want to give a special cake for
her beloved mummy and the other is for her boy friend mummy.

I had baked & decorated these cakes with my esteem love,
hope those mothers will enjoy & happy !

My Holiday Baking

I was enjoyed my three days holiday with cake baking last week.

My adopted father had celebrated his 75th birthday last
Saturday, he had a chocolate mango cake on his birthday.
I baked a chocolate sponge cake and filled with 2 layers of fresh
mango cubes and cream.

Unfortunately, the cake was damaged on my way back to home
town because of me wanted to dodge a dog was rust out to the
road on my driving.

With a heavy heart, I removed all the damaged cream and
mango, re-filled the cake layer with the fresh mango cube
and cream I had bought at my home town.

Another 2 birthday cakes had requested on last weekend.

I baked a chocolate sponge cake for this cake, and filled with two
layers fresh mango and cream.

A vanilla sponge cake also filled with peach slices and whipped
cream, top with fresh grape fruits.


A chocolate cotton cheese cake for my mum. I baked this cotton
cheesecake and celebrate the mother's day with my mum on last
Sunday also. This was a early celebration of mother's day this year.
I had done a simple decoration for this cake with some extra cream.
