咸蛋四季豆 (Stir-Fried French Bean with Salted Egg)



材料:

300gm 四季豆, 切成有5cm长
2tbsp 虾米,浸软
1粒 熟咸蛋,切碎
1粒 熟咸蛋黄,切碎
2tbsp 蒜泥
2tbsp 油

调味:

少许盐
1tsp 生抽
少许 胡椒粉
1/2 tsp 糖
80-100ml 水

做法:

1. 将四季豆以热油泡一会儿, 盛起滴干油.
2. 烧热 2大匙油, 爆香蒜泥和虾米.
3. 加入咸蛋和咸蛋黄碎炒均.
4. 加入四季豆和调味料, 以大火炒至熟即可.



Ingredients:

300gm french bean, cut into 5cm length
2 tbsp dried prawn, soaked
1 no boiled salted egg, chopped
1 no boiled salted egg yolk, chopped
2 tbsp chopped garlic
2 tbsp oil

Seasoning:

dash of salt
1 tsp soy sauce
dash of pepper
1/2 tsp sugar
80-100ml water

Method:

1. Deep-fried french bean in hot oil for a while. Drained.
2. Heat up 2 tbsp oil, saute chopped garlic and dried prawn
until fragrant.
3. Add in chopped salted egg and egg yolk, stir well.
4. Add in french bean and seasoning, stir-fry at high heat
until cooked.
