焦糖奶油泡芙 (Salted Caramel Cream Puff)

公司的一位男同事,即将在11月成为人夫;最近也突然对下厨产生了兴趣。有一天他突然问我为什么他做的闪电泡芙连狗也不吃?我当时可是觉得莫名其妙,后来才知道他在烤好了泡芙后还让其留在烤箱里待完全冷却,结果拿出来时泡芙已经硬得咬不下了。

经他这么一问,触动了我想做甜点的念头。



早前煮了一份焦糖,做了我自己心目中想做的甜点。出来的成品,无论味道和口感都让我出乎意料的。

泡芙的食谱我参考了 Sonia 家的,只是面层的饼干面糊在烤出来后的成品觉得自己做得太马虎了。


 
咸焦糖酱
(原食谱取自这里)

1杯    砂糖
1大匙    玉米糖浆
1大匙    水
1/2 杯    鲜奶油
1/2 小匙    海盐
55克    牛油

做法:
1. 把糖,玉米糖浆和水放入锅内以大火煮至金黄色,期间不要搅拌以防止结晶
2. 离火,倒入鲜奶油,拌均 。再以中火煮2分钟,要不停搅拌
3. 离火,加入盐和黄油,搅拌至完全融化,冷却后并放入冰箱冷藏过夜 (冷藏后的焦糖表层会有一层油,只需搅拌均匀)

饼干面糊

50克    牛油,室温
50克    黄糖
60克 面粉,过筛

做法:
1. 将牛油和黄糖搅拌均匀
2. 加入过筛面粉,拌均成面团
3. 用油纸包起,揉成圆柱状,放入冰箱冷藏至硬


泡芙面糊

125克    鲜奶
125克    水
125克 无盐黄油
5克    盐
5克    糖
250克    鸡蛋,打散
163克    中筋面粉(过筛)

1. 将鲜奶,水,盐及无盐奶油放入盆中
2 .使用中小火煮至沸腾,离火
3. 将过筛的低筋面粉倒入用木匙快速搅拌变成一团
4. 再以小火边煮边搅拌到粉变成不沾锅,离火
5. 把面团倒入一个干净的搅拌碗里,继续.搅拌面团至室温度
6. 慢慢加入蛋液,分4-5次慢慢加入,每一次都要搅拌均匀才
(面糊呈现缓慢流下的程度即可,有剩余蛋液也不要再加了)
7. 把面糊装入挤花袋,挤在已涂油或铺了油纸的烤盘上
8. 把饼干面团从冰箱取出,切成薄片铺在泡芙上
9. .放入预热烤箱,以190度C烤20分;然后再转用热风烤5-10分至金黄色
10.出炉后移至铁网架上放凉

奶油馅料

300克    鲜奶油
2大匙    咸焦糖酱

做法:

1. 将鲜奶油打起,加入咸焦糖酱拌均
2. 把奶油馅料挤入冷却的泡芙中即可

*奶油甜度可以自行调整

"爆酱"烧包


这是早前做的烧包,也是我一直很想做的。我很常在外边买烧包吃,我最喜欢市区老
街有家卖包子和糖水的茶室的烧包,其味道很好;只是随着物价高涨,感觉包子里
的馅料也好像"缩水"了。



这烧包的食谱收起有段时间了,一直都嚷着想做可就是少了一份冲动;也是因为酥
皮费时多工的步骤让我一再给自己迟迟不动手的借口。



烧包
(食谱取自  Kathrine Kwa )

馅料:

350克    鸡肉,切幼粒
1粒    大葱,切碎
50克    杂豆,冷冻 (用热水川烫过)

调味料:

1荼匙    盐
2汤匙    白糖
1 1/2 大匙    蚝油
1茶匙 生抽
1 1/2荼匙    老抽
1 1/2茶匙    麻油
少许    五香粉

芡汁:
1大匙    粟米粉
1 1/2 汤匙 水

做法:

1. 锅里烧热3汤匙油,炒香大葱,加入鸡肉炒一会,再加入调味料炒至稍干;加入
杂豆及打芡,取出待冷

皮用料A:

200克    面粉
60克    牛油
2汤匙    糖
100ml    清水

-  揉成面团

皮用料B:

160克    面粉
100克    白油

 - 揉成团

做法:

1. 将A和B面团各分成20份,搓圆
2. 用A包入B,□成长形,卷起,重复这步骤一次,然后搓圆休息10分钟
3. 再将面团□成圆薄片,包入馅料以螺旋形折起,排放在烤盘上,涂上蛋液
4. 放入预热烤箱以200度烤15分钟;取出再涂上蛋液,洒上少许芝麻,继续烤15分
钟至金黄色

Chocolate Banana Cake


这是做给父亲庆生的巧克力香蕉蛋糕。其实父亲的生日是在中秋
节的前三天,因为时间关系和母亲商议后就趁他俩老人家在开斋
节假期来渡假时预先为父亲庆祝了。

这个蛋糕装饰的很简单很单调,可是我本身还是很喜欢那些立在
蛋糕上的 fondant小寿桃。

Green Tea Cake (绿茶台式蛋糕)

My auntie called me and asking a piece of cake to her yesterday.
She was reminded to me this cake must came with not so sweet,
healthy and not oily. I've understood that my auntie always
keep to say she want to reduce her weight, but she always "eat
first than diet later......"

This is a Taiwanese sponge cake. It's soft, light, spongy and with a
strong green tea flavour. Some of my friend they don't like the
green tea taste but I've strongly recommended to one of my
baking friend of this spongy cake.

Another Parent's Day

I've made these chocolate brownies for another parent's day
celebration dinner.

I was informed by them these brownies will given to everyone
especially for the parents who have attend to this function. They
were requested me to pack the brownies into a nice small gift boxes.

Since this is a charity work and have to save the cost, I've decided
and sponsor these gold and silver small boxes for their celebration.

When I'm packing this, I've think of my dad, did he blame to me
or unhappy because I not celebrate this father's day with him?
Anyway, I hope all the parents who were attended to this dinner
will have a happy and lovely night.

My First Scone

This is the first time I made scone.

What I was understand in scones: this small cake is a quick bread.
A British snack of Scotland, made of wheat flour or oatmeal;
usually with baking powder, sugar, butter, milk or cream and
sometimes eggs. Scones are often lightly sweet but may also
savoury.

I was made this scones with "rubbing" the butter into the dry
ingredients become bread crumbs before adding the wet
ingredients to form the soft and sticky dough. Then shaped and
cut out with cutter, place on a greased baking tray and baked in a
preheat oven.

I've not prepared for my dinner last night because I was enjoyed
with this scone!

Cakes

Mango Cheesecake

I got a call a week before from David & Rachel were asked a
mango cheesecake for their best friend, Brother Pang's birthday.
This is a 1.5kg mango cheesecake, made with fresh blended
mango puree and extra mango cubes inside the cheese filling.
They also requested that filled the top of cake with additional
mango cubes and with the word writing "Happy Birthday
Brother Pang".

I was not satisfied with the word writing because of not clear
enough and nicely done.

Durian Cream Cake

Another cake done as requested by my brother's house mate
for his friend.
This is a sponge cake filled with two layers of durian cream and
with simple decoration.

My Holiday Baking

I was enjoyed my three days holiday with cake baking last week.

My adopted father had celebrated his 75th birthday last
Saturday, he had a chocolate mango cake on his birthday.
I baked a chocolate sponge cake and filled with 2 layers of fresh
mango cubes and cream.

Unfortunately, the cake was damaged on my way back to home
town because of me wanted to dodge a dog was rust out to the
road on my driving.

With a heavy heart, I removed all the damaged cream and
mango, re-filled the cake layer with the fresh mango cube
and cream I had bought at my home town.

Another 2 birthday cakes had requested on last weekend.

I baked a chocolate sponge cake for this cake, and filled with two
layers fresh mango and cream.

A vanilla sponge cake also filled with peach slices and whipped
cream, top with fresh grape fruits.


A chocolate cotton cheese cake for my mum. I baked this cotton
cheesecake and celebrate the mother's day with my mum on last
Sunday also. This was a early celebration of mother's day this year.
I had done a simple decoration for this cake with some extra cream.

4. Light Sponge cake with butter icing
