我患相思~柠檬蜂蜜相思蛋糕


 这蛋糕红爆了!早前在 FB 刮起的相思风都几劲一下,现在这股相思风球还在各部落
格括着。



 我留意了这蛋糕一段时间,昨晚相思虫爬到我身上来;刚好母亲告诉我周末会过来
我家,所以多给了我一个理由试做了这个蛋糕。真的!蛋糕出炉没有让我有后悔的
借口,一片进口还不够;还要再来一片。


真的要千谢万谢 Siewhwei, 发掘了这个让人赞不绝口,吃了停不了口的好食谱。


柠檬蜂蜜相思蛋糕
(食谱参考自 Siewhwei 的 柚子茶相思蛋糕;详细制作步骤可参照 东东家的)

用料A:
65克    粟米油
50克    蜂蜜
1粒    柠檬皮
30毫升    柠檬汁
50毫升    牛奶
1/4 小匙    盐
100克    蛋黄
1粒    全蛋
65克    低粉

用料B:
200克    蛋白
75克    幼糖
1/2小匙    柠檬汁

做法 : A
1. 将液体材料混合拌均
2. 加入低粉搅拌至光滑,备用
3. 蛋白加入柠檬汁打至粗泡;加入幼糖打至中性发泡
4. 加入 A 料轻轻均匀,倒入已铺油纸的8寸方形模,以 150'C 蒸烤 55分钟 (视个别烤箱而定)
5. 出炉后,脱模待凉

Lemon Honey 'XiangSi' Cake

Ingredisents (A):

65g corn oil
50g of honey
grated lemon rind
30ml  lemon juice
50ml  milk
1/4tsp salt
100g egg yolks (about 5 egg yolks)
1 whole egg
65g cake flour

Ingredients (B):

200g egg white
75g caster sugar
1/2 tsp lemon juice

Method:

1. Mix corn oil, honey, lemon juice & milk together in a mixing bowl

2. Add in egg yolks and egg, mix well
3. Add in lemon rind and flour, mix until smooth
4. Whisk egg white with lemon juice until foamy; gradually add in sugar and continue whisk until soft peak foam
5. Mix (1) into egg white until well combined, pour mixture into a 8'square pan (lined)
6. Steam bake at preheat oven at 150'C for 55min or until cooked

5. When done, remove cake from cake pan and let cake to cool

    蛋糕表面好完整,完全没有脱皮的现象,很美!

    1. 第一次做这蛋糕,很紧张;害怕那种蛋糕沉心也跟着沉下的情形.还好成品出来还可以接受.
