再来--绿茶蜂蜜蛋糕


之前做了原味的蜂蜜蛋糕吃完后,那股想再吃这蛋糕的欲望一直缠
绕着我。

这次我用了分蛋式,即无 SP 也无油的配方。Anncoo 处有很详细的
制作步骤;只是我没做大理石状而改为全绿茶口味的。蛋糕冷藏隔
夜才吃,口感很湿润,松软;我很喜欢。





材料:
5个 鸡蛋 (室温),分开蛋黄和蛋白
120克 糖
100克 高粉
10克 抹茶粉
2大匙 蜂蜜
2大匙 热水




做法:

1. 烤箱预热至 160'C.。把一个 8" 方型烤模铺上两层油纸,扫上少许油防沾
2. 蜂蜜加入热水搅拌至溶解,备用
3.高粉和绿茶粉过筛两次,备用
4.蛋白放入搅拌缸以中速度搅拌至起粗泡,把糖分三次加入再继续搅拌
至硬性发泡
5. 把蛋黄逐粒加入;接着慢慢加入过筛面粉
6. 倒入蜂蜜的混合物,并继续打1分钟至完全混合均匀
7. 把面糊用筛子过滤入烤模,放入预热烤箱烤约55分钟或插入竹签拔出
无面糊沾物
8. 把蛋糕从烤箱拿出,连同烤模离柜台一尺高轻摔一次以防止蛋糕收缩
9. 手触摸到蛋糕不烫手时就可脱模让蛋糕冷却至微温
10. 用保鲜膜把蛋糕包起, 放入冰箱冷藏隔夜

  4. Hi girl, you are so pandai in making this cake. I've got the mould, bought it from HK while I was on holidays there & then waiting for 5 weeks for it to ship over, but the mould is still sitting in my pantry room. This green tea flavour is the one that I want to try to make in the future. I'm going to take a piece from you to taste first, then will be returned in the future, ok?
