咸鱼翻生了!

电视剧[食为奴]出了句搞笑的精句 : 翻生,翻生,咸鱼都会翻生,也因为一道咸鱼
包而让 FB 一班爱好烹饪的朋友闹翻天了。

我也很好奇到底剧里皇帝爱吃的咸鱼包是什么味道。东筹西拼,依家里有的现成材
料乱搞出来了山寨版的咸鱼包。这款肉煎包热吃肯定好吃又香,冷却后包皮较硬,肉
馅的味道也比较重;不过可以再以小火煎香。




包皮:
400克    面粉
1/4 小匙    盐
150克    热水
100克    冷水

肉馅:
450克    猪肉碎,半肥瘦
90克    水
1小匙    盐

2小匙    绍兴酒/米酒
2小匙    酱青
1小匙    姜泥
1小匙    胡椒粉
2大匙    麻油

80克    梅香咸鱼肉,剁碎
30克    青葱粒



做法:

1. 包皮 : 面粉加入盐混均,把热水倒入,搅拌成颗粒状
2. 慢慢加入冷水揉成光滑的面团,休面30分钟
3. 肉馅 : 把盐加入水里搅拌至融化;把肉碎边搅拌边加入盐水至起胶
4. 加入剩余的调味料,拌均
5. 再把咸鱼肉碎和青葱粒加入,搅拌均匀
6. 把面团分成 14-15份,把面团杆成圆形薄片,包入肉馅再稍微压平
7. 锅里烧热适量油,以小火把包子煎成金黄色或至熟

  1. haha....oh dear Chin ! What a surprise you're making here. I too aftering that HK movie and thought of making them as well but no time to do so. However, yours sounds as wonderful. Bet it tastes so addictive with those salted fish.
