巧克力马卡龙 (Chocolate Macarons)

我终于忍不住动手做了长久以来很想挑战的马卡龙!!

这是一道很甜的法国甜点,太过甜的食物我一向都很抗拒的。这次
纯粹是因为好奇想体验做马卡龙的乐趣。

食谱我用了 daily delicious 的,只是我自以为是地把杏仁粉改为
了榛子粉。在过筛的步骤做得还不足够,出炉后的马卡龙表面有
很明显的不光滑。

110克 糖粉
65克 杏仁粉
13克 可可粉
60克 蛋白,室温
20克 砂糖
1/8小匙 塔塔粉

巧克力酱:

108克 烹调巧克力
60毫升 奶油

做法:

1。将糖粉,杏仁粉和可可粉过筛
2。用电动搅拌机将蛋白和塔塔粉搅拌至粗泡沫。慢慢加入砂糖,
继续搅拌至干性发泡。
3。把过筛粉料分三次加入打起蛋白内拌均。
4。将混合料装入一个附有 5mm 圆形花嘴的挤花袋,挤在已铺
油纸的烤盘。
5。将挤好的马卡龙放置一旁让其表面结皮不黏手。(约 45
分钟 - 1小时)
6。放入预热烤箱以160‘C 烤15分钟。从烤箱拿出,待冷。
7。巧克力内馅 : 将两者一起隔水煮溶,待冷后做为夹心内馅。

  4. I have been wanting to bake macaroons too....but worried it might not be nice...no feet etc. But seeing yours just urged me little.....yum yum chocolate! My favorite! ;))

  14. fun : 看过好多食谱都要用到杏仁粉,这是主要材料。如果你不喜欢可以改用其他如开心果粉,榛果粉等。
