Coffee Muffin (咖啡松糕)

这是昨晚在看电视时突然心血来潮而做的松糕.

制作松糕并不是我的强项.虽然其制作步骤简单容易, 但是要做到
松糕会开口笑并不是容易的, 我想.

曾经有一个烘焙同好告诉我, 她也一直认为制作松糕很容易, 只
要干材料和湿材料搅一搅, 拌一拌, 再把混合料滔进烘盘和纸杯进
炉烘熟就可以了.怎知她烘出来的松糕也和我有相同的问题 - 又干
又硬. 还好,这一次的松糕烘出来的成果自己都有一点点的满意,
因为有那么一点的进步了.

Recipe:

(A)
320gm self-rising flour
3/4 tsp baking powder
160gm sugar

(B)
2 eggs
200ml fresh milk
100gm melted butter
2tbsp instant coffee powder, dissolved with 1tbsp hot water


1. Sift self-rising flour together with baking powder into a mixing bowl.
2. Add in sugar, mix well.
3. Make a whole in the centre.
4. Mix all ingredients (B) together and slowly pour into the above.
5. Light mix with hand whisk or spatula. Do not over mix.
6. Spoon the mixture into muffin cases or muffin tray.
7. Bake at preheat oven at 180'C for 20 minuets.

Yield: 20 mini muffins.
